Welcome to the first ever Messy Mommy Blog Post! This week I thought I would start things by making a family favorite, my mom's lemon snowflakes. The cookie is light, chewy, and not overly lemony or too sweet.
It also has only four ingredients which makes it super easy for the kiddos or beginner cook.
What you'll need is a box of lemon cake mix, powdered sugar, a container of whipped topping, and an egg.
You'll also need a cookie sheet, a bowl, a silicon spatula or spoon, a regular spatula, and a ziplock bag.
Preheat the your oven to 350.


Stir until everything is well blended.

That way once the batter is in there you can just zip it up like this!
Now put the batter in the fridge for a few hours or in the freezer for about an hour.
Cut the corner off a your bag, and use it to squeeze out a little of dough, cutting the dough so it looks like gnocchi.
Roll the dough in your powdered sugar and place it on a baking sheet that is lined with parchment paper or foil. Bake at 350 for 10-12 minutes or until the cookies are very lightly browned.
And feed to your minions! My girls ate 2 dozen of these before I could stop them!

Ingredients
1 (18.25 ounce) package lemon cake mix with pudding 1 egg
2 1/4 cups frozen whipped topping, thawed (or an 8 oz container of Cool
Whip)
1 egg
2 cups confectioners' sugar
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Mix the cake mix, egg and whipped topping
together.(batter
will be sticky)
3. Spoon batter into ziplock bag.
4. Chill for 3 hours or overnight in fridge.
5. Cut corner off of bag, squeeze batter out into
ropes, cutting into ½ inch sized pieces. (It should look like gnocchi)
6. Roll lightly in powdered sugar.
7. Place
cookies onto ungreased baking sheets and bake at 350 degrees F (175 degrees C)
for 10 to 12 minutes or until lightly browned.
